What do you put in yours? As we all get ready to go back to school and work, I was putting some thought into what makes a good lunchbox? Do your children end up eating the same sandwich, fruit, snack and drink every day? To help me ring the changes I have devised a mix and match approach to lunchboxes. A healthy lunchbox will contain some wholegrain carbohydrate (wholemeal bread, wrap, roll, crackers, or cous cous, quinoa, rice, pasta) for slow release energy to reduce those afternoon energy slumps. A portion of protein e.g. a hard boiled egg, slice of ham, leftover roast, cheese, homous, prawns, mackerel, small pot of beans or pulses. Along with a portion of vegetables (carrots, pepper, radish, watercress, lettuce, beetroot, tomato, sweetcorn, peas in a pod) and a piece of fruit.
