What gives aquaculture oysters a consistent shape and the desired deep cup? The answer is tumbling and a handling. Every oyster is tumbled approximately 3-4 times throughout its life to knock off new growth on the bill, forcing the oyster cup-up. Tumbling is a labor intensive and time consuming process but it allows the oyster to hold their liquor in the deep cup of the shell and makes it easier to slurp them down!
