What is unfactory food? Simply put, it is made the way mom, grandma, and maybe aunt susie did it. Unfactory baking is a way of doing things that does not require automation, unnatural preservation, or marketing intimidation to produce or consume. Unfactory food is often un-uniform, with varieties in texture, color, and taste. These variations maybe slight, and to some unnoticeable, but because each piece of unfactory food is made, crafted, coaxed, napped(our bread dough naps) and generally loved into being, they go into your stomach in a more satisfying, hunger fulfilling way. Behind the unfactory food, you find the baker. Our unfactory bakers are artisans. Through practice, practice, practice skills in mixing, baking, and decorating have been mastered. Unfactory colors, favors, and techniques restores pleasure to the palette and leaves you with less negative side effect from the food, such as yuck mouth, and indigestion.
