What you see here is the convergence of two issues: too much zucchini from the garden and too much weight gain since June. So, friends, I will not be making zucchini bread, muffins, etc. I bought one of those veggie things at Walmart that makes pasta. This is one smoked sausage link, browned in a little bacon fat, with fresh garlic and some onion. The zucchini pasta cooked in that for several minutes, then I put some of my home made catsup in it, cause I did not want to open a whole can of tomato sauce. Finally, topped it with 1 oz of grated mild cheddar and YUM! The pasta was al dente and because I could swirl it around my fork, my brain said pasta!
