Whats on the menu?? Last night we ate Meatballs and Rice pasta. Delicious, Nutritious and gluten free! I skipped the rice pasta and had broccoli and cauliflower on the side instead. This would easily serve 4 people. Meatballs- 500 Lean beef mince or minced turkey or chicken breast. 1 carrot 1 red capsicum half and onion 2 sticks of celery. a hand full of baby spinach. 1 egg a few shakes of Worcestershire sauce (optional) * or really any vegies you have on hand, its a great way to sneak in vegies for your kids. Broccoli, sweet corn, cauliflower, green beans they will all work. roughly chop veg and throw it into the food processor and blitz roughly (you can also use a blender, but you might need to do it in batches, I start by blitzing my veg then tip it out and add some mince, then blitz again in a couple of batches) It is just rough mix/blitz to combine everything. Form it into balls with wet hands ( you can even do this the night before.) When you are ready brown off your meatballs (it takes about 10-15 mns)- this helps them hold together when you add the sauce. SAUCE 1 cup Bottled Passata- just the plain Italian cooking sauce (Comes in a tall bottle and is basically just pureed tomato), or a can of pureed tomatoes. Half a salt reduced stock cube (optional) Seasonings- i like a little pepper steak seasoning Chilli or hot chilli sauce (optional) a sprig of fresh chopped or 1/4 tsp of oregano a sprig of basil chopped a handful of parsley chopped 1 tblsp red pepper paste (optional, my man is doing minimal tomato, so I am adding this and water and reducing the Tomato) Roasted red capsicum from a jar chopped, sun dried tomatoes chopped (optional) garlic to taste. 1/2 cup water Add all of the above to the meatballs, stir. Simmer for 30 mins- or until the sauce is reduced. Taste- adjust seasonings. You could also just put the whole thing in the oven cover it and let the oven do the work while you go and do something else (maybe workout *gin*). Serve over rice, or rice pasta or noodles. Or add some beans and serve with a big salad. Or wrap in Mountain bread with extra salad. You can really play with the sauce- its kind of a free range recipe. You could add anchovies if you like, or use a store bought sauce- but be aware of added sugar!!
