Whats up healthier-people? Todays been another whirlwind day but I managed to get my doubles in back-to-back. I did Total Body Cardio Fix and Pilates. Hopefully tomorrow I will be able to split the workouts into morning and evening workouts. I still havent had time to work on my menus. Still, today was on track. Before I did my workouts, I finally put that Jalapeno Chicken casserole in the oven. Not bad! I used brown rice, chicken, cilantro, monterey jack cheese, onions, jalapeno, eggs, olive oil and low fat evaporated milk. The recipe made four hefty servings and I even used our handy 21 day Fix cups to do my measurements so I could be sure of the number of containers per serving. It comes out to 1 red, 2 yellow, 1/2 green, 1 blue per serving. So I added some steamed Brussel sprouts to add to my green count. Very easy to put together and well within the ranks of the 21 day Fix program. I am proud to say that I lost 1/2 a pound this week! Whoop-whoop! I almost dismissed it, but I am coming to appreciate any movement in the right direction. With this 1/2 pound, I am that much closer to reaching my 3-week goal of six pounds. Only 2.5 pounds left to go for this mini goal! :) Not long ago I would have thrown in the towel - even if only for a few days - because of only losing 1/2 a pound. So I am truly happy with the personal growth I am experiencing. OK, its late and Im tired. Ill talk to you all tomorrow!
