While the world of CAL was lost in a yeasty madness last weekend, I wandered from the path well trodden, down another to discover a whole new world. Although I was one of the first to jump on the bandwagon, ready to bake a yeasty loaf, it was while searching for some recipes that I discovered this fascinating world – the world of sourdough. And, before you ask, no – I am not afraid of Mr. Yeast. We made our peace long ago. We have reached a sort of compromise, Mr.Yeast and I, and have a healthy respect for each other. So while I respect his appetite for sugar and warmth, he respects my kneading power. It’s a win-win situation for both of us. While Mr. Yeast whets his appetite, I get soft, spongy loaf in turn. I am digressing here. Getting back to sourdough, I read about this magical ingredient in another forum. Sourdough, as was explained to me, is something that has been used since ages for baking bread. The dough harnesses the power of naturally occurring wild yeast found in wholegrain and is used for leavening bread. Now, I do not belong to a bread baking family and, therefore, have not been handed down a starter. So, I went about making my own sourdough starter. This was on Sunday, the 15th June, 2014. The starter is to be ready in a week and today is the fourth day. I am nurturing this starter like a baby. I have developed a connection with this very live starter and hereby christen him Tintin. At four days old, Tintin is still growing. He will grow to be a mature young man by the end of the week and I hope he lives long. After all this, it wouldn’t be right, if I didn’t give you a glimpse of my baby. Presenting my very own sourdough starter, Tintin.
