Why not try an omelet for breakfast? I have tried many different kinds, but the one I made this morning was super good so I thought I would share what I did: - slice of onion, chopped -slice of green pepper, chopped -1/2-1 handful od spinach, chopped -1/3 of a vine ripened tomato, chopped (but any will do mine were medium sized) - feta cheese -1/3 cup of egg whites( I use liquid, but you can easily use 2-3 whites separated from whole eggs) Directions: Put the onion, pepper, spinach, and tomato into a skillet sprayed with cooking spray. Cook for 3-5 minutes or until veggies look cooked/soften. In a separate pan cook the egg whites. When bubbles start to form and the eggs start to "lift up" Pour the cooked veggies on half of the egg whites. Put feta cheese on top, how ever much you desire, and fold the empty egg white side over to make that omelet shape. Cook until done and enjoy!
