Wilting spinach! I came up with this easy way to wilt fresh spinach. Add an inch or two of water to a large pot. Insert a metal steamer basket into large pot, make sure water doesnt touch the strainer. Wash spinach, put in strainer, and cover. Steam on high for 10 minutes or so, turning occasionally. Take strainer out and set in sink for 10 minutes. Place a triple layered paper towel beneath and above spinach and press. Remove paper towels and put a double layered towel on top of spinach on the plate and press. We love spinach and artichoke dip and this part was always a pain!
