Wonderful easy recipe for Blueberry Pie from Southern Food: read recipe first and must use fresh blueberries, not frozen ones. 1 Baked Pie Crust 6 Cups blueberries, divided 1/4 Cup sugar 2 T water 2 T cornstarch 1/4 Cup water 1 T butter 1 T lemon juice (T=Tablespoon) Whipped cream for topping Combine 2 cups berries, sugar and 2 T water in large saucepan and bring to a full boil, Dissolve cornstarch in 1/4 c cold water and add to hot blueberry mix, return to a boil and stir constantly for 2 mins. Remove from heat and add butter and lemon juice, and add remaining 4 cups blueberries. Spoon into crust and set for 3 hours in fridge...Serve with whipped cream on top....delicious and serves 8........easy to make
