YAY! Its Jam n Bread day!!!! Please pread the word about todays fabulous Indian & Lebanese music event. Below are the recipes for Lebanese Bread & Naan which Ill be making from 10am at Port Kembla Community Centre. Come down and join me if you are interested :) NAAN Ingredients 450g (3 cups) bread flour 7g sachet (2 teaspoons) dried yeast 1 teaspoon salt 1 teaspoon caster sugar 185ml (3/4 cup) warm water 90g (1/3 cup) greek yoghurt 2 tablespoons vegetable oil 30g ghee, melted Sesame seeds, toasted Method 1. Combine the flour, yeast, salt and sugar in a bowl. Mix in water, yoghurt and oil. Knead dough for 5 minutes or until smooth. 2. Place dough in a bowl. Cover with plastic wrap and set aside in a warm place for 1 hour or until the dough has doubled in size. 3. Meanwhile, preheat oven to 250°C. Preheat pizza stone for 40 minutes. Punch down dough then divide it into 6 portions. 4. Roll out each portion of dough on a lightly floured surface into a 12 x 20cm oval shape. 5. Spray both sides of the dough with oil. Bake on pizza stone for 5 minutes or until puffed and light golden. 6. Brush with ghee and top with sesame seeds. Wrap in foil to keep warm. Repeat with the remaining dough. Lebanese Bread 7g sachet dry yeast 1 teaspoon caster sugar 1 1/3 cups warm water 4 cups plain flour 1 teaspoon table salt 2 tablespoons olive oil 1. Step 1 Place yeast, sugar and 1/3 cup warm water in a jug. Stir to dissolve yeast. Set aside in a warm place for 10 minutes or until foamy. 2. Step 2 Sift flour into a large bowl. Add salt. Stir to combine. Make a well in centre. Add yeast mixture, 1 tablespoon oil and remaining warm water. Mix to form a dough. 3. Step 3 Turn dough out onto a lightly floured surface. Knead, adding remaining oil, for 20 minutes or until smooth. Place dough in an oiled bowl. Cover. Set aside in a warm place for 2 hours or until doubled in size. 4. Step 4 Using your fist, punch dough down. Knead for 2 minutes or until smooth. Divide into 8 balls. Using a rolling pin, roll each ball out to a 22cm round. Layer rounds between baking paper. Set aside in a warm place for 30 minutes or until slightly puffed. 5. Step 5 Heat an oiled barbecue plate on high. Reduce heat to low. Cook bread, in batches, for 2 minutes each side or until lightly browned and puffed. Serve.
