Years ago, when we had a big garden, my neighbor brought me a sample of relish that she had made along with the recipe. I made and canned it several times over the years, but hadnt thought too much about it until I ran across this recipe. Since I dont have a big garden anymore, the amounts listed sounded right up my alley. This made two small jars....one to keep in my fridge and one to share. It is great on a hot dog (Ros, wish you could try it...lol), or anything you might like relish on. Makes good use of the green tomatoes hanging on the vines this time of year. Green Tomato Relish 2 large green tomatoes ¼ red bell peppers, halved and seeded (I didnt have red, but did have yellow....worked fine, just not as colorful) ¼ green bell peppers, halved and seeded 1 large onion ¾ teaspoon celery seed ¼ teaspoon salt ⅓ cup sugar 3 tablespoons cider vinegar Instructions Coursely grind or chop the ingredients, from tomatoes to onions. Let the mixture sit in a colander for about an hour so some of the extra juices can drain. Combine the mixture, plus the rest of the ingredients, in a pot until they come to a boil. Simmer for 5 minutes, stirring frequently.
