Yesterday evening was one of the best for me for many reasons. 1. My Brother-in-law / Devar (Chachajis son) Sanyog Sharma who just finished his B.E (Mechanical) in June, is selected in Merchant Navy. Only 40 out of lakhs of applicants are selected from the whole country going through rigorous scanning procedures like Written exams, Personal Interview, Physical Fitness challenges and Health check ups. It makes so proud coz I too am a Mechanical Engineer but never got a chance to actually fulfill my dream in terms of career. And now that hes posted in Lonavala and is leaving by the month end, I had them over for dinner 2. I was super excited about using my new Pasta Machine. Have made Pasta from scratch but always rolled them like we traditionally roll our chapatis and cut them the way I want (Lasagne, Farfelle, Spaghetti, Fettuccine, Pappardelle, Ravioli and many more) And yeh they turned out great The Menu for the night was Mediterranean and Italian 1. Bruschetta – Tomato, Basil, Jalapeno and Cheese Bruschetta Oh it was so crunchy and yummy that you could hear the cracking sound while taking a bite 2. Mezze Platter with Sesame Lavash with Herbed Hummus, Veg Crudités and Tzatziki Home made Sesame Lavash, hummus with lots of fresh and dried herbs like Thyme, Parsley, Oregano with a dash of smoked Paprika and lots and lots of olive oil drizzled on top. Had prepped for the Falafel but to be honest ran out of time with the pasta rolling.. 3. Veg Lasagne Layers and layers of soft and silky Pasta sheets with a layer of exotic vegetables like Zucchini, Baby corns, Mushrooms, Red bell peppers, Yellow bell peppers, Green bell peppers, Onions, Garlic, Carrots, French Beans, Cauliflower and Spinach (blanched and topped - I am like Popeye the Sailor and love Spinach, so I topped the cheese layer also with some spinach) all sauteed and added to the Marinara Sauce (again made from scratch) ..... Then a layer of Mozzarella Cheese and again Pasta sheets and veggies in sauce and Pasta and finally topped with home - made Alfredo Sauce and loads of Mozzarella.... Oh the gooey and stringy cheese with the smooth pasta and the crunch of veggies with the richness of the Marinara and Alfredo sauces... 4. Spinach and Feta Ravioli in Pink Sauce My first attempt at trying Pink sauce and actually trying to make the Ravioli that used to be served at Dangeedums... The Pink Sauce was made from a combination of Alfredo Sauce, Marinara Sauce and store bought 6 Cheese Sauce (Ragu).... The Ravioli again made on my new gadget and stuffed with Blanched Spinach, exotic veggies (as mentioned above) and sauteed with olive oil and added Crumbled Feta cheese (bought from Paras store) I know that the amount of sauce was a bit more in the bowl but like a True Italian, all of us swept the sauce off our plates with the extra Garlic Loaf and enjoyed every bit of it. And my better half always paranoid about trying something new, loved the Ravioli more than anything else... He loved it so much that just like Nigella Lawson walking to the kitchen at midnight, he too walked out to the kitchen around 2 and opened the fridge and ate some more even without reheating it... (Usually he is a simple man with simple palate and very happy with Daal, Chawal, Roti, Subzi, Salad and Butter milk. He is more Gujju than me though he is a Haryaanvi ;) ) 5.Brownie with Ice Cream And White Chocolate Ganache And Drizzles Of Chocolate Sauce Nothing to write as this was not what I wanted to make 6. Trifle with Nutty Ice-Cream, Fruit Jelly, Brownie Sand, Fresh Fruits And Oodles Of Whipped Cream This was assembled in a fraction of a second so please excuse the presentation as I dont have that lovely wide Trifle Glasses but it was so darn tasty with the soft and smooth whipped cream, the lovely crunchy texture of nuts from the ice-cream, the yummy fruit jelly, tasty brownie crumbled on top and the Strawberry compote on the bottom The original plan for desserts was Brownie with White Chocolate cage and vanilla ice cream in dark chocolate bowl AND Dark and White Chocolate Mousse in a single Trifle Glass but unfortunately there was some issue with the White chocolate and it didnt melt like normal so ended up making a Ganache. Gonna make these 2 pretty soon.... P.S. - I dont have those fancy Restaurant kinda plates and bowls to serve and present the food in a heavenly manner but now thats on my list and planning to go on a shopping spree soon.... So please excuse the OK OK pictures and not so fancy plating
