Yesterday my plan was to make cauliflower crust pizza and have the baby falling in love with cauliflower crust home made pizza....but well....I had so much work to do that I couldnt get to it.... I had huge portobellos in the refrigerator so cooking in the oven is always a great alternative when you dont have that much time. I simply put a bit of olive oil, parsley, garlic, onion, cherry tomato, salt and pepper....I covered it with aluminium fold and let it cooked for 15 minutes on low-medium heat. Then I cooked some red quinoa....bined it with long greens and a little avocado oil dressing..... Such a great source of protein, very light on the stomach yet you are not hungry after..... Then we went for a 8km power walk! lol
