Yesterdays post discussed the fact that eggs are among natures perfect foods. However, in this world of MISINFORMATION ABOUT NUTRITION many people mistakenly believe the egg yolk is the worst part of the egg, when in fact, THE YOLK IS THE HEALTHIEST PART OF THE EGG! By throwing out the yolk and eating egg whites, one is essentially throwing out the most nutrient dense portion of the egg. The vitamins, minerals and other antioxidants are packed in the yolk. Even the protein in the egg whites isnt as powerful without the yolks to balance out the amino acid profile and make the protein more bioavailable. Also, egg yolks from free-range chickens are loaded with the healthy omega-3 fats. It’s SO SAD the many restaurants list egg white items on their healthy breakfast menu. Honest modern scientific studies have conclusively shown that dietary cholesterol is of NO CONCERN. Also, the fat in the egg yolks is EXTREMELY HEALTHY. Thats correct; the health properties of whole eggs are far superior to egg whites. By far, the HEALTHIEST eggs come from hens that are allowed free-range access and feed on Gods natural chicken edibles. These eggs are very rich in nutrients and have a very healthy omega-6/omega-3 ratio. The normal supermarket eggs coming from factory farms, where hens are jammed into small cages and fed substandard food dont compare nutritionally with the organic free-range eggs.
