You go into your store and you see this veggie, it is called a Kohlrabi. It kind of looks like a veggie from outer space. You look at it for a moment and move on to the veggies you know. Leaving behind this tasty good for you treat. SO what is Kohlrabi – well it is in the same family as cabbage, broccoli, cauliflower, kale, collard greens, Brussels sprouts. The taste and texture is similar to the broccoli stem or cabbage heart, it is mild and sweet. They can be white, or purple. The leafy greens can also be eaten. Because of the family they come from they are full of antioxidants which we all now know are what our body needs lots of. You don’t want to get a big Kohlrabi – the size from a racket ball and tennis ball is good. When they get bigger they can be woody tasting. You will peel the fibrous layers off and then you can cook them or chop them up and eat them raw. The Kohlrabi is full of vitamin C and has folate as well. It also has potassium, phosphorous and magnesium. How can you use a Kohlrabi – raw you can put it in salads, make slaw, or slice them thinly, drizzle some good olive oil on them with some sea salt or Himalayan salt. You can put them in chunky veggie soup or puree them in a creamy soup. Slice them up and make home fries. They are great roasted in the over with other fall and winter veggies. Even steam them and mix them in with pasta dishes, fritters or your own creative recipes. Best of all it is another veggie to add to your list of tasty and good for you foods. So give them a try!!
