You know how you have certain experiences that define whole parts of your life? I remember watching Julia Childs scramble an egg, and thinking how good can an egg be? Then I followed her instructions and my eyes were open, the world of food has not been the same since. I recently had another of that type of experience, oddly enough also centered around the egg. The Thai call it Star Egg, it is simply an egg, fried in oil in a wok on high heat. It creates the wholes spectrum of egg awesomeness, from deliciously crispy protein to custard to nearly raw yolk. Humble ingredients become magnificent when prepared right! Check out the videos bwlow, I highly suggest trying both!
