ZUCCHINI CRESCENT PIE: 2 packages Crescent Rolls (8oz, each)* 2 medium zucchini, chopped 1/2 cup onion, chopped 1/4 butter, cubed 2 t fresh parsley 1/2 t salt 1/4 t dried basil 1/2 t pepper 1/2 t garlic powder 1/4 t dried oregano 2 eggs, slightly beaten 2 cups shredded Colby Jack cheese 1 link (1/2 package) turkey smoked sausage 1-2 medium Roma tomatoes, sliced Press crescent dough into pie pan, pressing seams together (or use the new, seamless one). *(I use a large pie pan, I need about 1 1/2 pkgs of the crescents)Bake at 375 for 5-8 minutes, until lightly golden brown. Sauté zucchini and onion in butter until tender, stir in seasonings. Pour into crust. Combine eggs, sausage and cheese, pour into crust. Top with tomato slices. Bake at 375 for 20-25 minutes, until knife inserted in the center comes out clean. Let stand 5 minutes before serving. Enjoy!!!
