breakfast for my honey :) fry 1 cup pork until crispy ( this is a leftover pork chop. Bacon will do too ) grate two medium potatoes. Add pork. Salt. In skillet. Melt 1 tbsp olive oil with 1 tbsp butter. Make little potato pancakes. Fry until crisp on one side. Flip. Cook until crisp on second side. For a perfectly poached egg. Heat water in small pot until boiling. Shut off heat. Add 1 tsp olive oil. Crack egg. Drop whole in water. Cover for 5 minutes for a settled yolk or 3 minutes for runny yolk. Scoop out with slotted spoon. Salt . Pepper and serve.
