cm STUFFED ARTICHOKES ITALIAN 1 cup coarse soft bread crumbs Parsley 1/4 Cup (16 tbs), chopped Parmesan cheese 1/4 Cup (16 tbs), grated Onion 1 Tablespoon, minced Garlic 1/2 Clove , minced Salt 1/2 Teaspoon Pepper 1/8 Teaspoon Artichokes 2 Large Olive oil 2 Tablespoon Boiling water Directions 1. Mix the bread crumbs, parsley, cheese, onion, garlic, salt and pepper in a small bowl. 2. Cut stems from artichokes to make base flat; trim leaf tips with scissors. Wash artichokes under cold running water; drain well. Spread petals slightly with fingers. 3. Spoon stuffing into center and about 1 teaspoon stuffing into spaces between leaves. Tie each artichoke tightly with clean string; stand in medium-size, deep saucepan. Drizzle 1 tablespoon of olive oil over each; pour in boiling water to a depth of about 1 inch; cover. 4. Cook for 40 minutes, or until tender when pierced with a fork; remove strings. jenni
