ecipe # 29: Sooji Halwa This is one of the simplest sweet, easy to make and a famous dish made during festival times. Ingredients: 1 cup sooji (semolina) 1 cup sugar 2-3 tbsp butter 1 to 2 cups water 1-2 tbsp cashews, chopped into big pieces 1 tbsp raisins 1/4 tsp cardamom powder A pinch of saffron, mixed in 1 tbsp warm milk A pinch of orange food color Method: 1. Heat 2 tsp butter in a pan and fry the cashews & raisins until sashews are golden brown. Remove and keep aside. 2. In the same pan, heat the remaining butter and roast the sooji for 5-10 mins on low flame or until a nice aroma comes out of sooji. 3. Now while slowly adding the water to the sooji, keep mixing the sooji well so that the sooji does not form into lumps. 4. When the sooji is completely cooked, add sugar, mix well and allow to cook for another 10 minutes. Keep stirring while the sugar melts and comes together into a thick pudding like consistency. 5. Then add the saffron milk, orange food color, few cashews & raisins and cardamom powder to the sooji mix. Mix well, remove from pan and serve it hot garnished with cashews if desired.
