eto na po yung recipe ng ube cake....enjoy and happy caking :)) UBE CAKE For the Ube: 1 pack frozen ube ( ito po gamit ko dito sa UK) 1 can condensed milk 1 tbsp ube extract 2 tbsp butter or margarine 2 cans coconut milk Mix coconut milk + ube , cook it over medium heat fire, then add milk + extract Continue mixing until mixture has been reduced , add butter, then continue mixing until you reach ur desired consistency . Set aside to cool . for use later . For the Ube Sponge: 2 cups self-raising flour 1 golden caster sugar 1 tbsp baking powder ¼ tsp salt 8 eggyolks + 1 white ¾ cup evaporated milk ½ cup vegetable oil 1 cup cooked ube 1 tbsp ube extract 2 tsp violet coloring Sift all dry ingredients, then add the rest Mix all together and set aside. Meringue: 7 eggwhite ½ cup caster sugar ¼ tsp cream of tartar Beat the eggwhite till u reach a soft peak, add cream of tartar ,then add ¼ sugar , mix until combined, then add the remaining sugar , beat till u reach the firm peak. Then fold in the Ube sponge batter with the meringue mixture very carefully so as not to lose the air. Then transfer mixture to the prepared 3 round baking tin in equally. Bake at 160 degrees for 40 minutes. Cool the sponges and let it rest. Ube Buttercream 3 sticks unsalted butter, room temperature 4 cups icing sugar, sifted 1 tbsp ube extract 1 cup ube 1tsp violet coloring Beat butter until creamy, then slowly add icing sugar , continue beating , add extract, ube and coloring. Assemble Spread ube on all the 3 sponges, then also spread a good amount of ube buttercream. Assemble the 3 layers of sponge. Cover the cake with ube buttercream. Decorate according to ur liking.
