new chicken recipe. called basque chicken. from food and wine cook book. very yummy. i improved (of course) as i didnt have cherry tomatoes. i used regular vine tomatoes and i had ham instead of prociutto or bacon. served with a side of brown rice (cooked with squash, green onions in chicken broth). basque chicken brown chicken, season with salt and pepper remove from pan add, garlic, onion, bell red and orange peppers cook until soft add thyme add dry white wine add back chicken and put in oven. cover and cook until chicken is cooked. once cooked. removed chicken, add the bacon or prociuotto and reduce until sauce is somewhat thick. serve it up! bon appetit.
