quinoa pasta: 1 1/2 cups Quinoa flour (temper a large batch in your oven before working with it 220 F and store in airtight container. better flavor when you do this!) 1/2 tsp salt 1/16 tsp (not a typo!) ground chia seed (can use coffee grinder) 1/16 Xanthan gum 2 egg yolks 1 whole egg 1. put flour, salt, chia seed, and xanthan gum in a large bowl and whisk together to combine all ingredients. 2. place flour on parchment paper. Build well in center of flour and place eggs in the center. 3. Slowly whisk the eggs into the flour. Exactly like making regular pasta with traditional white flour. 4. Once combined roll into a dough ball. Kneed dough ball with hands for about 2 min. 5. Dust surface & dough with extra flour and roll out with a rolling pin. Tossing and cutting edges as needed. 6. cut desired shapes. If you have a pasta maker you can use that as well. Pasta will cook for 2 mins! Do not cook longer... or it will be a disaster. :p
