We dont start out in life loving French fries and hating, for example, whole wheat pasta, explains Susan B. Roberts, director of the Energy Metabolism Laboratory at the USDA Human Nutrition Research Centre on Ageing at Tufts University. Its on that premise that the team at Tufts, based in Massachusetts General Hospital, started to wonder - if were able to train the brain to prefer unhealthy food through repeatedly eating the bad stuff, might we be able to condition the mind to favour low-calorie, healthy foods if we were to habitually eat them instead? Contrary to popular scientific belief that sugar, fat and salty food addiction circuits are extremely difficult to curb and near impossible to reverse, Roberts and her team used a reward system to prove otherwise. The six-month study took 13 overweight and obese men and women as their subjects. Eight out of the 13 were enrolled on a new weight loss program designed by the Tufts University researchers, while the remaining five were in a control group. At the beginning and end of the six month study, the scientists used magnetic resonance imaging (MRI) to measure the reward centre associated with learning and addiction on all 13. READ - Planet Organic plans a diet take over The results were clear - those who had practised the weight-loss program had naturally increased their brains sensitivity to healthy, lower calorie foods after six months. Scans carried out on the healthy group recorded a distinct increased enjoyment factor over healthy foods after just six months, while their response to higher-cal foods was considerably dumbed down. The weight loss program is specifically designed to change how people react to different foods, and our study shows those who participated in it had an increased desire for healthier foods along with a decreased preference for unhealthy food, the combined effects of which are probably critical for sustainable weight control, said co-author of the research paper Sai Krupa Das, PhD scientist in the Energy Metabolism Laboratory at USDA. Highlighting behaviour change education, high-fibre foods and low-glycaemic choices as key factors in the success of the mind-shifting weight loss program, Krupa Das added that this is the first demonstration of this [healthy food preference] important switch. When it comes to fattening foods, sustained abstinence does not make the heart grow fonder. READ - The fashionistas made fabulously healthy by food The US-based study was designed specifically to suggest, as Roberts explains, that it is possible to shift preferences from unhealthy food to healthy food without surgery, but what it does highlight for the rest of us is that a healthy habit ends up shifting not just your weight, but your food preferences. We are very encouraged that, the weight loss program appears to change what foods are tempting to people, adds Roberts.
