10. Chicken and Mushroom Vol au Vents Serves: 6 Preparation time: 15 to 30 minutes Ingredients 2 cups cooked chicken, diced 1 brown onion, diced 200 grams mushrooms, sliced 100 grams grated low fat tasty cheese 2 cups milk 2 tablespoons plain flour ¾ tablespoon butter 2 tablespoons chopped parsley salt and black pepper 6 large vol au vent cases Method Melt butter in non stick fry pan. Add onions and cook until tender. Add mushrooms and cook until all liquid has evaporated. Stir in the flour and gradually add the milk, continuing to stir until mixture starts to thicken. Add chicken, parsley, salt and pepper and half the cheese. Stir all together and remove from heat. Warm 6 large vol au vent cases in a preheated oven for 5 minutes. When the cases are ready fill with mixture and top with remaining cheese. Place them back in the oven until cheese has melted. Luka
