50 states of cast iron. The pan moves on tomorrow! ABT dip: We love ABTs but hate the work and for a crowd? Forget it! But for a number of servings for a larger group, this stretches them quite a bit. 12-18 Jalapenos peppers (20-24 is better) 3, 8 oz blocks of cream cheese 1 pound of bacon chopped before cooking, this was more than a pound. 1 T Ragin River Dizzy pig seasoning or your fave rub that you use on ABTs, I used dizzy pig swamp venom. Hot and spicy, and I shake some on top too. Cook the bacon till almost done in a cast iron skillet. while it is cooking seed and chop the peppers to bite size pieces. a melon scoop works great for seeding them out. when the bacon is done remove from the pan reserving the fat. stir in the peppers and stir to coat with the fat and heat just till the color sharpens , just a minute or two. you just want to coat the peppers and have the flavor of bacon there. place the cream cheese in a bowl and microwave to soften stir, in the ragin river, or anything seasoning you like to use. Stir till smooth and spoon over the peppers in the pan. If you let it sit a minute after stopping on top of the peppers it will spread much easier. smooth out but do not stir together. You want layers with this. Sprinkle the bacon bits over the cheese and then sprinkle with the Dizzy dust or any seasoning you like. heat in the oven at 350 or just till bubbling and serve with a plain cracker or scoops. it just needs to heat up I have done this the day before with great results. just toss in the oven and heat. I do this mostly on our big green egg. So 350 indirect or even direct till bubbly.
