A cloud of dust billows up from the corral as horses and their riders pivot and turn, singling out a calf to guide into a nearby pen. Just like it was done in the Old West. But this is a Saturday afternoon in 2014. Among the riders in this “penning” exercise are both men and women, all members of the Empty Saddle Club in Rolling Hills Estates, where an impassioned niche of cowboy culture thrives.
