A little background of where Alexander and Christopher get their love for the restaurant business! I have to share because I am so blessed to have a wonderful husband and sons that I am so proud of and bring so much happiness to my life! By Paula Alternosfera Paulie Nichols Chef/Kitchen Manager There are many components that contribute in making a kitchen or restaurant run well. One is what binds it all together. Paulie Nichols was referred to me as the glue. The force that brings his coworkers together as a team. Currently titled kitchen manager, Paulie has worked both front and back of the house for over 25 years. Originally hired as a cook then working up to management. In the early 90s, Paulie left us to open his own place, Paulies Gourmet Take Out and Catering in Endicott. With a successful venture under his belt he moved to North Carolina hoping for better opportunities and more sunshine. As it often happens, Kathy, his wife, missed her family and they returned to New York and fortunately for us Paulie to Number 5! While having high performance expectations, Paulie keeps the environment fun. Discussing sports stats, always supporting his favorite team, the Dallas Cowboys. Paulie makes everyone laugh with tales of vet bills and his Golden Lab mix, Max. It seems Max has a palate for pillows and pantyhose. It is said that the apple doesnt fall far from the tree. The love of the restaurant business can flow through our veins to the next generation. Paulies sons now have their own restaurant. The recently opened, Alexanders Cafe and Sweet Endings located at 34 Chenango St. They feature signature paninis, homemade soups, smoothies, and amazing desserts. Contributing to the revitalization of the downtown Binghamton area. For those of you who do not know kitchen work, it can be hard. Sometimes it is very hot and the hours are always long. But when your coworkers say you make them feel like family than you must giving it your best. Thanks Paulie!
