A little something for the weekend, a healthy turkey bolognese for the whole family. Ingredients: 400g lean turkey mince Fry light spray 1 large carrot, chopped 1 large onion, chopped 3 celery sticks 1 tbsp tomato purée 2x 400g cans of chopped tomatoes with garlic 400ml chicken stock Basil to serve Whole meal pasta to serve Method: 1. Heat the pan and dry fry the turkey mince until browned, transfer onto a plate and set aside 2. Spray the pan with the fry light spray and add the onion, carrot and celery and cook until soft, about 10mins. Add the tomato purée and cook for a minute continually stirring to avoid sticking 3. Add the tomatoes, turkey and stock with some seasoning. Summer for 20 minutes plus until thickened. Serve with pasta and fresh basil. This dish can be made and frozen ready for a meal in the week. Enjoy!
