A lot of love for the buffalo casserole I made last night! Here is how I made it, as promised... 1 kg of diced buffalo Flour (I used gluten free), for dusting 1 tablespoon olive oil 4-6 carrots, peeled and cut into 1-inch pieces 4 ribs celery, trimmed and cut into 1-inch pieces 2 potatoes, peeled and cubed 2 hands full fresh green beans, trimmed and cut into 1-inch pieces 1 large onion, cut into wedges through the root end so it hold together 1 tin of diced tomatoes 1/2 can water 1 teaspoon dried thyme Pinch of red pepper flakes (optional) Salt and pepper, to taste Preheat the oven to 325 degrees. Dust the meat with flour, brown meat in a hot pan Turn to medium heat, add the carrots, celery, potatoes, and green beans and cook, stirring as needed for another minute or two. Add the onion, tomatoes, water, thyme, and pepper flakes, if using. Add a few grinds of pepper and a teaspoon of salt. Stir gently to combine. Put into a casserole dish, cover and place it in the preheated oven. Cook until the meat and vegetables are very tender, 2 1/2 - 3 hours. Check it towards the end of cooking to make sure there is enough liquid, and add water, as needed. Taste for seasoning and add more salt and pepper, if desired, then continue cooking until it is completely cooked. Super easy recipe, just needs time to cook
