This recipe is stolen from on-line BUT I researched a bunch of recipes and this seemed, by far, the most authentic and most fun……so many flavors…….a little. thicker, fishier, spicier and bolder than the store stuff. Mix…. 1/2 C malt vinegar 1/2 C apple cider vinegar 1/2 C blackstrap molasses 1/4 C fish sauce 2 T tamarind paste (pulp mashed with H2O} 1 T soy sauce 3 T onion juice{process onion and drain} …..set aside Toast for 1 minute…… 1 t ground black pepper 1/2 t cinnamon 1/2 t ground cloves 1/4 t cayenne pepper …….set aside Heat…… 2 T olive oil 1 big shallot, minced 4 cloves garlic, minced 1 t freshly grated ginger 8 anchovies, minced …..3 minutes Add vinegar and spice mixture and heat to simmer then cool completely. Strain and stir in the juice of one lime.
