A reporter from the Tribune called yesterday - she is doing some interviews about the EcoChallenge. She wanted to ask aobut my pledge to have no garbage for two weeks. I told her that I have not avoided all garbage and that I think its because I did not think far enough ahead. Ive had good success at the grocery store avoiding extra packaging, produce stickers, etc. But what Ive found difficult is the spur-of-the-moment situations such as when Im at home cooking. For example, yesterday I decided to make a giant pot of minestrone soup, some of which I intended to freeze. The recipe calls for chard or spinach, neither of which I had on hand. So the choice was use some frozen spinach which comes in a non-recyclable bag, but was right there in my freezer, or DRIVE to the store to get fresh chard or spinach. Which is worse? I may try this again next year, but it will definitely mean a great deal of prior planning to make sure I have all the food ingredients I need. OR to be much more strict about not using food in packaging. This is making me appreciate this challenge all the more.
