AMEN DOCTOR! However, my following a vascular surgeon for my preceptorship way back in nursing school still affects the way I view my beloved cheesecake each time I take a bite. I know the real problem is absolutely the inflammatory cascade, however, I saw WAY too many carotid endarterectomies not to be permanently haunted by the vivid image of saturated and trans fat emerging from each patients neck veins. I can still conjure up not only that image, but also the way it felt to the touch; somewhere on a scale from mushy to rubbery to totally calcified, depending on how long it lingered there. And ever so large. Just sitting there. Living for years in somebodys neck, hiding, waiting to break apart and be rushed upriver toward their brain to cause a stroke. Not everyone was overweight either. Thats the disturbing part. It starts when we are toddlers! This man speaks the truth, conventional American eating is not okay. Im not perfect at changing my ways, but I still see those images when I eat something I shouldnt. Crap. Now what will I bring to Sunday dinner tomorrow. Im in charge of desert!
