ANOTHER RECIPE: Havent tried this one but will be for Thanksgiving! Rheas Custard Pie 3 eggs, beaten 3/4 cup sugar 1/4 teaspoon salt 1 teaspoon vanilla 1 egg white (I dont do this because pie never lasts long enough in our house to get soggy - lol) 2 1/2 cups scalded milk 1/4 teaspoon ground nutmeg Few drops of yellow food coloring, optional 1 9 unbaked pie crust Preheat over to 400 degrees. Mix together eggs, sugar, salt and vanilla. Stir well. Blend in the scalded milk. For more yellow color, add few drops of yellow food coloring. Line pie pan with pastry and brush inside bottom and sides of shell with egg white to prevent a soggy crust. Pour custard mixture into piecrust. Sprinkle with nutmeg. Bake for 30-35 minutes, or until a knife inserted near the center comes out clean. Cool on rack. Note* - If it looks like your pie is browning too fast (which, I have that problem when I use my smaller oven), I simply tear off a sheet of aluminum foil and lay on top of the pie for the remainder of the baking time.
