AUNT DELLIE COVAULT’S DATE PINWHEEL COOKIES Dough: 4 C. flour 2 C. brown sugar 1 tsp. soda 2 eggs1 tsp. salt 1 T. lemon juice 1 C. butter 1 tsp. vanilla Date Filling: 1 1/2 C. (8 oz.) chopped dates 1/2 C. water 1/2 C. sugar 1 T. lemon juice 1/4 - 3/4 C. walnuts (chopped) DOUGH:Sift, and then measure flour. Add soda and salt and sift 3 times. In separate bowl, cream butter until light and fluffy. Add sugar gradually. Add eggs, one at a time, beating well after each. Add lemon juice and vanilla. Gradually add dry ingredients, blending well. Divide dough in two portions. Roll or pat each portion to thickness of 1/2 inch and spread with Date Filling. DATE FILLING:Cook the dates, water and sugar slowly until dates are soft. Remove from heat, beat until smooth. Add lemon juice & nuts. Cool & spread on dough. Roll each "log" like jelly roll and wrap in plastic wrap. Place in the refrigerator for several hours or until ready to bake. When ready to bake, preheat oven to 400 degrees. Cut thin slices from roll and place on a greased baking sheet. Bake cookies for 10 minutes.
