I post awesome stuff everyday!~ CHOCOLATE FUDGE ZUCCHINI BROWNIES Preheat oven to 350 degrees... Line 9 x 13 pan with parchment paper 1/2 cup shredded zucchini 1/3 cup unsweetened applesauce (I used a single serve cup- just a tad over) 1 cup + 2 TBSP water 2 tsp. PURE vanilla extract 3 TBSP ground flax meal 1/2 cup + 2 TBSP coconut oil 3/4 cup cocoa powder 1 cup coconut flour 1/2 tsp. salt 1/2 tsp baking soda 3/4 cup stevia in the raw ( or sugar you prefer) 4 drops pure liquid Stevia (or 2 more TBSP sugar) 1/2 cup mini dark chocolate chips, optional In large mixing bowl, combine the first six ingredients. Side aside at least five minutes. In another bowl, combine the rest of the ingredients. Pour the wet ingredients into the dry ingredients stirring until evenly mixed. Batter is very thick. Place in pan and use a spatula to push to edges of pan. Take another piece of parchment on top of batter to press down evenly and firmly being sure to get batter over entire pan bottom. Bake 20 minutes. Remove from oven, put extra parchment back on top of baked brownie and press down with large spatula to set. Allow to cool about 30 minutes before cutting. Icing 1/2 cup cocoa powder 2 TBSP pure maple syrup 1/2 cup virgin coconut oil, melted Mix all ingredients until smooth and spread over cooled brownies. These should be stored in fridge! Frosting softens quickly at room temperature.
