After about 3 weeks of limiting sugar or foods that readily convert to sugar such as basic carbohydrates (bread, pasta, rice, grains) and focusing on healthy proteins (grass fed, organic, wild, legumes), fiber/enzyme/phytonutrient rich whole foods (fruits, vegetables, sea vegetables, herbs, spices, seasonings, celtic sea salt) and healthy fats (grass fed butter, EVOO, coconut oil, pan drippings) I have never felt so good in MY LIFE! This is huge. Gone are the cravings, the roller coaster bottoming out, the afternoon lows, lack of energy, confusion, hunger, the hypoglycemic shakes. The interesting thing is that I dont need to eat as much to stay sated for a longer period of time (5-6 hours) and Im certainly eating less protein (about 2-3 ounces/meal). I still dont eat any fruit in the morning, per the diabetic diet, combining it after lunch and I NEVER EVER do juices. In fact, I dont quite get this juice fad. My body extracts the sugars which makes sense because there are no enzymes from chewing and fiber is broken down so everything else metabolizes quickly. If I were to eat the SAME thing whole (not liquified), I wouldnt have the same reaction (bottoming out, shakes) an hour later. My conclusion is that an unprocessed hunter/gatherer diet works because humans have evolved this way over millions of years. My body is liking this logic, so I will stick with it!
