After two weeks out of town at work, hubby FINALLY gets to come home on Friday! In celebration of that, we will have Roasted Boston Pork Butt with Red Potatoes and green beans with onion and bacon. Saturday will be Grilled Steaks with loaded baked potatoes and salad, and on Sunday I will use the leftover roasted pork and make Shredded Pork Enchiladas, smothered in Green Chili, onions and cheese, topped with sour cream and diced tomatoes, with refried beans and rice on the side.
