Am a chicken farmer....and new eggs have a membrane wall that has not separated from the shell...as an egg ages the shell dries out and the membrane shrinks. write the date you bought the eggs on the box...let them age 3 weeks and the egg will peel this quickly. If not use a plastic spoon. I use the cold water method, put eggs in a pot covered with cold water, set a timer for eggsactly 22 minutes, turn off heat, pour off water. Let sit 10 minutes with NO WATER, then use cold water to cool the eggs, draining the water and refilling till the eggs are cool.
