An update on the crack potatoes. Ok, I tried them. I fixed them, first time, according to the recipe and though they were good, that was entirely too much sour cream for my taste. So, I made them again, using cheese, bacon bits and lots of good seasonings. I baked it for 45 minutes at 400º and it turned out great. The outside was crunchy and the inside was melt in your mouth good. If you like sour cream, a spoonful or two will be great, but the 2 full containers in the recipe is just too much. I put the hashbrowns, the seasonings, the cheese and the bacon into a bowl with a lid, shook the crap out of it to mix it all together, poured it in the pan and topped with a little more cheese. It turned out really, really good.
