Anas Shrimp Mozambique Serves 2-4 4 tb butter 1/2 cup chopped onion 8 cloves garlic, fine chopped 1/4 cup chopped cilantro or parsley, divided 1 tsp turmeric 1 tsp saffron, crushed 1/2 cup water 1/2 cup white or light red wine or 1 can beer 1 tb. Lemon juice 2 tsp coarse sea salt or to taste 1/2 tsp white pepper 2 tsps hot sauce or generous pinch crushed dried chili flakes 1 pound med. shrimp (26-30 count), peeled,deveined Cooked long grain rice (opt) 1. Melt butter in skillet. Fry the onion until lightly golden,.stir in garlic, one half cilantro or parsley, the turmeric,saffron and water. Cover and simmer 2 minutes to allow favors to mingle. 2. Pour in wine or beer and lemon juice. Recover, bring to a boil,reduce heat, then simmer two minutes.season with salt , pepper and hot sauce. Mix in shrimp, turn in sauce, cook maximum 3 minutes, uncovered.Serve in bowls with bread on the side to dip in broth or ladle all over a platter of hot cooked rice. Garnish with remaining cilantro or parsley. Serve with Vinho verde like Joao Pires. Enjoy!
