Here is a little more history on the Pepparkakor - Most of today’s ginger thins do not contain pepper, but pepper was once added to medieval gingerbread dough mixes. In those days, pepper was one of the most important commodities from the Orient. For a long time pepper was considered to have a medically calming effect and was also used for digestive problems.The Swedish-Norwegian-Danish King Hans (regent 1497-1501) was prescribed ginger thins by his doctor. Apparently he King suffered from bad temper and it was generally thought that ginger thins made you happy. There is information from a pharmacy in Copenhagen that it sent several kilograms of gingerbread home to King Hans. The rumour that eating Pepparkakor makes you kind is still going the rounds today, so perhaps the cure worked. God Jul!
