Are you a lover of feta? I LOVE feta! Here is an easy dinner that can be prepped the night before, and put in the oven upon arriving home, and there you will have an easy, clean dish for dinner! Ingredients 4 – 4 oz boneless, skinless chicken breasts salt and pepper to taste ½ Tbsp olive oil 10 oz frozen spinach 1 tsp minced garlic ½ tsp dried basil ⅓ cup crumbled Feta cheese ½ cup reduced-sodium chicken broth 1 Tbsp lemon juice 1 Tbsp butter ½ tsp garlic powder ½ tsp dried oregano ½ tsp dried parsley ½ tsp Italian seasoning 2 – 10 oz frozen bags Simple Truth® Organic Red Quinoa and Brown Rice *You will need baker’s twine or toothpicks Instructions 1. Preheat oven to 350. Lightly spray a casserole dish with nonstick cooking spray, set aside. 2. Place chicken breast in a plastic bag or in between wax paper. Using a rolling pin or a meat tenderizer, pound chicken until thin and wide. 3. Season lightly with salt and pepper, set aside. 4. On low heat, warm ½ Tbsp oil in sauce pan. Add spinach, garlic and basil. Cook until spinach is done, about 12 minutes. 5. Remove from heat and add feta. Mix well. 6. Distribute spinach mixture onto each chicken breast. 7. Roll chicken and secure with baker’s twine (or toothpicks if in a pinch). Place in casserole dish. 8. In the same sauce pan, over medium-low heat, add chicken stock, lemon juice, butter, and seasoning. Cook until butter has melted and sauce has warmed through, about 5 minutes. Stir occasionally with a wooden spoon. 9. Drizzle ½ cup of sauce over chicken and bake for 30-35 minutes or until chicken is cooked through.
