Armadillo To prepare an armadillo, place it on its back, cut off head, tail and feet and remove the belly skin. Then cut around the shell and remove it. Clean carcass as you would a turtle. Baste while cooking with 2 cups of white wine that includes 2 tablespoons of olive oil.
