As a vegan, I try to make a conscious effort to almost never even mention tofu. First of all, its such a stereotype that it almost makes it seem like we need tofu, or soy products in general to get the protein we need. But in general, I just think its important to break somewhat fallacious stereotypes about veganism. Not to put down tofu (the kind made with non-GMO soy of course) - it has its uses, but it surely doesnt define the diverse diet most of us vegans take pride in. Thoughts?
