Ayurvedic Lemon Rice 2 cups rice 4 cups water 2 tbsp. oil 1 tbsp. peanuts or cashews 1 tsp. cumin seeds 1½ tsp. mustard seeds 1 green chilli or green capsicum slivers 1 tsp. turmeric powder ½ lemon ½ tsp. black salt ½ tbsp. chopped coriander Cashew-nuts Wash the rice. In a pot heat the water and when it starts to boil, add the rice and reduce to medium-low heat, and cover. Cook until tender. Cut green chilli into slivers. Heat the oil in a saucepan and add cumin seeds and green chilli and sauté for 2 minutes. Add mustard seeds and nuts and sauté for 3 more minutes. Add the turmeric and sauté for 4 minutes. Add the cooked rice and salt. Mix well. Squeeze lemon juice over the rice. Garnish with chopped coriander and cashew nuts
