BBQ Deer Steaks - our son took a nice buck opening weekend, today we are having loin steaks to celebrate his success. I took a half tenderloin, trimmed and rolled in Wild Thang Wild Game Rub then smoked @ 275 degrees over a hickory fire. The loin was cooked to an internal temperature of 150 degrees, which is slightly over medium. Left to rest for a few minutes, sliced and devoured! From field to table in less than 24 hours. Excellent flavor, better than beef!
