BUTTERMILK RANCH DIP Here’s a surefire way to get your family and friends to eat more vegetables. When they dunk raw carrots, sliced zucchini, broccoli florets, or just about any other raw veggie in a low-fat creamy dip, they’ll soon be back for seconds, thirds, and fourths! Thin this yummy dip with a little more buttermilk or lemon juice and it doubles as a fantastic ranch salad dressing. The dip gets its richness and tang from the buttermilk, its vibrancy from the scallions and parsley. All around, a winner! SERVES 8 (SERVING SIZE: ¼ CUP) 1 cup nonfat sour cream ¼ cup reduced-fat mayonnaise ¼ cup nonfat or low-fat buttermilk (shake well before measuring) Juice of ½ lemon ½ teaspoon kosher salt ¾ teaspoon black pepper 1½ teaspoons onion powder ½ teaspoon garlic powder 2 scallions (white and green parts), thinly sliced 2 tablespoons finely chopped fresh parsley Combine all the ingredients in a medium mixing bowl, and stir well to combine.
