BUTTERNUT SQUASH PIZZAS WITH ROSEMARY!!!! Ingredients: - 2 cups sliced onion - 1 butternut squash; peeled, seeded, and sliced VERY thin - 2 teaspoons chopped fresh rosemary or 1 teaspoon dried rosemary - salt and fresh-ground black pepper to taste - 6 tablespoons olive oil - 2 balls of pizza dough - 2 tablespoons cornmeal - Grated Asiago or Parmesan Cheese Steps: 1. Preheat the oven to 400 degrees. Place the onion and squash in a roasting pan. Add the rosemary, the salt and pepper, and 4 tablespoons of olive oil. Toss well. Bake the vegetables for 20 minutes or until the onions are browning and the squash is tender ( it took me around 35 minutes, mostly because it was stacked fairly thick) 2. Increase the oven temperature to 450 degrees. On a floured surface, roll each ball of dough into a big circle. I made homemade dough, but there is fresh dough at Raleys that works just as well. Place the pizzas on a baking sheet sprinkled with cornmeal ( you can make the pizzas one after another). I placed the dough in the oven for 5 minutes to let it firm up and then took it out and distributed the squash mixture over the two rounds. Bake the pizzas for 10 minutes or until the crust is firm. 3. Sprinkle the pizzas with cheese, and drizzle them with the remaining olive oil. Cut the pizza up, and serve. The recipe was completely vegetarian, so for the meat eaters in my family I grilled some sausage and put it on the pizza along with the butternut squash mixture :) I highly recommend this, and will definitely be making it again!!!
